6 Freezer Friendly Recipes

Filling my freezer was one of the best things I did to prepare for the birth of Noah.  Take a look at that glorously full freezer above.  *sigh*  Doesn’t it just make you feel all warm and fuzzy inside?   😉

(I made a bunch of stuff, but I’m not super woman.  My mother-in-law and a girlfriend helped out a lot by contributing freezer meals.  I am blessed!)

Here is a sampling of the dishes that are waiting for me in my freezer.

6 Freezer Friendly Recipes

Crockpot Chicken with Black Beans – This is a super simple creamy, Mexican chicken dish.  The first time I made it, I served it over white rice.  The second time I tried a yellow Spanish rice, which was amazing.

Pizza Casserole – Cheese and pepperoni and noodles, OH  MY!

Homemade Smoothie Kits – I didn’t follow this recipe exactly (mostly because I forgot that it called for orange juice concentrate and I didn’t have any).  I was still really impressed with her method for freezing yogurt.  When I’m ready to make my smoothies I’ll just need to add a splash of juice or milk.

Zuppa Toscana Soup – This is an Olive Garden soup.  Enough said, right?

Enchilada Meatballs – This was a fun spin on traditional meatballs.

Curried Lentils – This dish has become a batch cooking staple in my house.  I always double the recipe and freeze half when I make it.

    you’re making me hungry … mmm curried lentils. I need to make those soon. How did you like the Enchilada Meatballs?

      The enchilada meatballs were good, but I like regular enchiladas better. The recipe made a lot of them and I got kind of tired of eating them. Of course that happens with any leftovers after eating them for 3 meals straight!

    Yeah Freezer Meals! Can’t get enough. I usually make double-dinner and freeze, but I would love to do one of those “once a month” things and do it all up at once. I’ll have to check out your 10 tips post too!

    we love curried lentils at our house too… but i haven’t ever frozen it. good idea!

    I’d also recommend stocking up on staple groceries before baby is born. Not really post partum for your body, but for your house. No-one wants to need to do laundry and have to run out for laundry detergent after having had a baby.

      YES!!!!! I can’t believe I forgot to include that, Rachel. I made sure I had plenty of toilet paper, toothpaste, and everything else.
