6 Freezer Friendly Recipes

May 18, 2012 by Rebekah Hoffer 7 Comments

Filling my freezer was one of the best things I did to prepare for the birth of Noah.  Take a look at that glorously full freezer above.  *sigh*  Doesn't it just make you feel all warm and fuzzy inside?   ;-) (I made a bunch of stuff, but I'm not super woman.  My mother-in-law and a girlfriend helped out a lot by contributing freezer meals.  I am blessed!) Here is a sampling of the dishes that are waiting for me in my freezer. 6 Freezer Friendly Recipes Crockpot Chicken with Black Beans - This is a super simple creamy, Mexican chicken dish.  The first time I made it, I served it over white rice.  The second time I tried a … [Read more...]

I love to prepare in advance. That's why I was so excited to help Rebekah prepare for the arrival of her new baby by doing a guest post. And I'm going to talk about my favorite thing - getting ahead in the kitchen. Recently we were enjoying a beautiful day and all my kids and I wanted to do was be outside. But I had to make dinner. Freezer Friendly: Rhubarb Jam & Strawberry Jam

June 12, 2011 by Rebekah Hoffer 13 Comments

I have had so much fun this past week making jam.  I started off making rhubarb jam, which was so easy. Rhubarb Jam Boil together for 15 minutes & stir often: 3 cups rhubarb, chopped into 1 inch pieces 1/2 cup water 3 cups sugar After 15 minutes, remove from heat and mix in: 3 oz. strawberry or raspberry jello Fill your containers.  This makes enough to fill 4 half pint jars.  If you freeze the jam, wait for it to set first. So easy!  So YUMMY! I also made strawberry jam with my friend, Emily.  First we went to a farm to pick the berries.  We were a bit concerned because no one was around and none of the … [Read more...]

To Freeze: Follow the instructions … [Read more...]
