I’m not a huge fan of baking.  It always feels like I need to measure out tons of ingredients, but not with these cake batter cookies!  The base of this recipe is a box of cake mix.  Add 3 more ingredients and you’ve got a super simple cookie that tastes great!

Super Simple Cake Batter Cookies

  • 1 box of cake mix (your choice of flavor)
  • 2 eggs
  • 1/3 cup oil
  • icing

Mix all ingredients together (except for icing).  Form the dough into balls and flatten them on an ungreased cookie sheet.  Bake at 375 degrees for approximately 9 minutes or until the edges are lightly golden brown.  The baking time and amount of cookies per batch will vary greatly depending on the size of your cookies.

Let the cookies cool for 1 minute before moving them to a cooling rack. Ice the cookies while they are still warm.

The flavor combinations are endless and can easily be customized for the season.

Watch the video below to see exactly how easy this recipe is and…

  1. To find out the secret ingredient I like to use in all my baking.
  2. To my learn my trick for perfect sized cookies.
  3. Most importantly… to get a glimpse of my baby bump!

These 4 ingredient cookies are super easy to make! I don't really enjoy baking, but this is a cookies recipe I can definitely handle.

Yum! What a great and easy idea. As I was watching the video, I thought: “I am going to try that with coconut oil.” And then you said you used coconut oil! Awesome. I can’t wait to try these!
