7 Meal Ideas for "Leftover" Grilled Chicken

The next time you fire up the grill, add some extra chicken breasts that you can use later in the week for any of these simple dishes. It will save some time in the kitchen and money in your pockets. Plus they will help you stay cool since most of them don’t require the oven.

Chicken Quesadillas

1. Quesadillas

2. Chicken Fried Rice

3. Super Fast Chicken Pasta

Lettuce Salad with Grilled Chicken

4. Lettuce Salad with Homemade Sweet & Sour Salad Dressing

5. Chicken Salad

BBQ Chicken Pizza

6. BBQ Chicken Pizza

7. Chicken, Broccoli, & Garlic White Pizza

Recently I tried this type of “leftover” chicken meal plan. It was amazing how many meals I could get out of the 5 small chicken breasts that my husband grilled.

Meal 1: Grilled chicken breasts, veggies, and potatoes
Meal 2: Quesadillas
Meal 3: Lettuce salad topped with grilled chicken

My family (2 adults, 4 year old, & 1 year old) ate nearly 3 whole breasts the first night. I was impressed with how far the remaining chicken stretched for the next two meals. This is a very cost effective way to meal plan and cut down on the expense of buying meat.

    My favorite ways to use leftover chicken is in soups, salad, chicken salad and my favorite use of all – buffalo chicken dip! Yum. Creative repurposing of leftovers saves money and prevents food waste – two wonderful things!
