Freezer Cooking Day (Part 1)

All day I’ll be busy in the kitchen with my friend Donna.  We are doing a mini freezer cooking day. Last year we did a huge menu that was organized by Tricia from Once A Month Mom.  It was great, but we wanted to try something a little smaller this time.

Here is the menu:

  • plain browned ground beef
  • taco meat
  • pizza dough
  • honey mustard chicken
  • italian marinated chicken breasts
  • baked spaghetti
  • curried lentils
  • zuppa toscana (an Olive Garden soup!)
  • black beans
  • banana bread
  • granola

I’m excited about our menu this year.  It isn’t nearly as many complete meals as what we made last year, but they are all foods we know we love and will use.

I’m so thankful for Donna’s hard work she has put in already! She did all of the grocery shopping, which includes making the grocery LIST.  That is a hard job for this kind of meal planning!!  Donna also did all of the chicken and ground beef prep.  (AHH!  That reminds me!  I need to check in the ground beef thawing in the fridge for the baked spaghetti!)

Thanks to Donna the italian chicken breasts, taco meat, plain browned ground beef and cut up chicken for the honey mustard dish are already in my freezer!

So what did I do to contribute?? I sent a lot of annoying emails to Donna.  I chopped the onions and soaked the black beans over night.  Plus I’m hosting this shin-dig at my house.  I think I’m making out pretty good on this deal so far.

My only concern for today is that Grace will be joining us. I hope that we can utilize nap time really well.  Pray that she sleeps for a LONG TIME!!  I have some new books for her to entertain herself with and I plan to indulge all her video watching desires.  I sure hope this works.
